Sorrel (also known as hibiscus, roselle, jamaica & other local names) comes in many varieties and is an important plant in Jamaica. So important that one variation, The Blue Mahoe (Hibiscus Elatus), is the national tree. Hibiscus Sabdariffa is the tangy flower used to make traditional holiday drinks, jams, and sauces.

This simple syrup combines the tart quality of hibiscus with a gingery kick.
